Black Bean Brownies with Essential Oils

I recently signed on to become a customer of essential oils (doTERRA). It all started earlier this summer when I was at a pool party, one of my friends was using essential oils for bug repellant. She said it worked well and I love the idea that it was all natural. So I decided to try them out. I have only been using them for a couple of days now, but I am amazed at what you can do with them. I know you can diffuse them, put them on topically, but apparently you can even back with them.

Below is a recipe for black bean brown, yes you heard right, black beans. As we are all aware black beans are loaded with nutrients. Apparently by using black beans the brownies are extremely rich, creamy and full of protein. You can also boost the flavor of your brownie with essential oils such as Peppermint, Wild Orange, Cinnamon, or even Lavender.

Ingredients:
1 (15 ounce) can black beans, drained, and rinsed
2 large eggs
1/4 cup cocoa powder
2/3 cup honey
1/3 cup coconut oil
½ teaspoon baking powder
Pinch of salt
4 drops Peppermint essential oil
¾ cup chocolate chips, divided

Directions:
1. Preheat oven to 350 degrees.

2. Place all ingredients, except for chocolate chips, in a blender or food processor and blend until smooth.

3. Pour batter into large bowl and stir in ½ cup chocolate chips.

4. Pour into greased 8×8-inch pan and top with ¼ cup chocolate chips.

5. Bake for 30-35 minutes or until a toothpick inserted in the middle comes out clean. Let cool and cut into pieces. Store in refrigerator.

Unfortunately my sons did not like them because I put the peppermint oil in it, and he is not a big fan minty flavor. Maybe next time I will try orange. I think they will like that better. So what should I do with the brownies? Well I think I am going to bring them to my practice. The nurses in the office love sweets. Now the question is, do I tell them I used black beans?
